Will Beet Green Chips Stop a Potato Chip Craving?

Beet Green Chips

My first advice for someone having a craving is that if that craving persists, you should eat that thing. Eat just enough that you feel satisfied. Otherwise, if you are like me, you may eat the whole house trying not to eat that one thing. Have you had that happen?

Today, I was craving potato chips but didn’t have any. I love the really good ones made with avocado oil. No, I don’t stick to eating totally healthy 100% of the time. When I try to do that, it backfires big time. I eat healthy 80-90% of the time. Well, today when the craving hit, I didn’t have any potato chips and hd six chapters to read today for just one of my classes this week so, no time to run to the store. I did have tons of beet greens from my garden. Here’s what I did:

Ingredients:

Beet greens

Avocado oil

Nutritional Yeast

Salt

Preheat the oven to 400 degrees. Wash a huge bunch of greens (trust me, they shrink, and you will want more), spin them, tear them into pieces, and smush in some avocado oil. To add B vitamins and protein, sprinkle liberally with nutritional yeast. Add a sprinkle of salt if desired. Bake for approximately 15 minutes, stirring every 5 minutes, until crispy. No, they still aren’t potato chips, but they are yummy, nutritious, and stopped my craving so I can study without making a trip to the store.
